What to do when
you’re craving pasta and meatballs, but have a vegetarian (or several!) on your
dinner guest list? Chef Vikki of Recipe Rehab — who specializes in giving
healthy makeovers to all sorts of comfort food faves — has a unique approach,
using lentils and walnuts to make delicious “meatless meatballs” that are both
satisfying and healthy. Disguised in tomato sauce over a bed of spaghetti,
these meatballs just may fool the carnivores in your group into thinking
they’re eating the real thing. If you’re not in the mood for marinara sauce,
they also pair well with pesto sauce or a simple honey mustard sauce for
dipping.
Ingredients
1 cup cooked lentils
1 carrot chopped
1 celery stalk
chopped
1/2 onion diced
4 oz. sliced
mushrooms
1 garlic clove
minced
1 egg, 1 tbs tomato
paste
Small handful of
fresh parsley roughly chopped
1 tsp thyme, Pinch
of black pepper
1/3 cup chopped
walnuts
1/4 cup finely
grated parmesan
